Removing almost all the moisture from a piece of meat concentrates everything else that's in it — protein, fat, everything — into a smaller, lighter piece.

This is freeze-dried chicken at 96%, with a small amount of lignocellulose, pea protein and psyllium husk, plus a live bacterial strain, Limosilactobacillus reuteri, at 5x10^9 CFU/kg. Moisture is down to 4%, which is why the fat and protein figures read so high.
