Why does the name say 80% when the fish is 45%?

Because the 80% is fish plus potato: 45% fish and 36% potato. The brand names it one way and its stockists name it the other. When you compare it to other foods, use the 45%.

Is it genuinely grain free?

Yes. No rice, wheat, barley or oats. The carbohydrate is dried potato and dried sweet potato with pea starch, and the only other plant ingredients are beet pulp and lucerne.

What is Skin Soothe?

It is the brand's own name for a functional ingredient in this recipe, declared at 2570mg/kg. Their older listing for the same food calls the same thing Itch-eeze. They do not publish what is in it, so we cannot tell you more than the label does.

Is it a complete food?

Yes. It is described as a hypoallergenic natural complete dogfood for all breeds of super sensitive working dogs.

How much do I feed?

The bag gives grams per day by the dog's bodyweight: 35 to 110g for a 1 to 5kg dog, 110 to 190g at 5 to 10kg, 190 to 320g at 10 to 20kg, 320 to 430g at 20 to 30kg, and 430 to 535g at 30 to 40kg. The brand prints its own caveat alongside it and it is worth taking seriously: breed, exercise level, neutered status and even how warm the house is all move the number, so start there and adjust to the dog in front of you. One thing to flag: the fish bag stops at the 30 to 40kg row and prints no figure for dogs over 40kg, where every other recipe in the range does. If your dog is bigger than that, scale up from the top row and watch condition rather than reading a number that is not there.
